cook1.gifI love this recipe…either eat these delicious little guys right away or hang them with ribbon and snack on them as you see fit! Candy-filled cutaways in the cookies melt into colored sugar “glass.”

5-6 packages of assorted hard organic candy or lifesavers
2/3 c. organic butter
1 and 1/4 c. organic granulated sugar
1 t. vanilla
2 organic free range eggs
3 c. all purpose organic flour
2 t. baking powder
1/2 t. salt
3 tb. organic milk

280030.jpgPreheat the oven to 350 degrees. Crush the assorted candies under plastic with a meat mallet – keep the colors separate or experiment with different combinations. Cream together butter and sugar and beat in eggs and vanilla. In another bowl, sift together flour, baking powder, and salt; alternately add the dry mix and the milk to the egg and butter mixture. Roll the dough to 1/4 inch thick. Cut out cookies in desired shapes and then replicate the cutout in the center of the cookies for a window effect (remember: if you want to hang the cookies as decorations, make a small hole at the top of the cookie…but large enough so it won’t seal up in the oven.) Place on a baking sheet lined with parchment paper or aluminum foil and fill the holes with the crushed hard candy. Bake for 6-8 minutes, or until the candy is just melted. Cool and enjoy!
